Vegan Pho

Ingredients:
1 Leek (sliced)
1/2 lb Shiitake mushrooms (sliced)
4 heads Bok choy (chopped)
2in knob Ginger (grated)
2 TBSP Sesame oil
3 TBSP GF soy free soy sauce (or coconut liquid amino acids)
1 Non-chicken broth cube
2 1/2 cups Water
Salt to taste
1 package of Pho noodles
Instructions:
- sautée leeks with sesame oil & salt
- add ginger and a little olive oil
- add shiitake mushrooms and 1/2 cup water, so they don’t stick to pan
- once mushrooms seem cooked (about 4 mins), add bok choy (cook for another 4 mins)
- add broth cube & 2 cups of water (mix to dissolve cube) plus the soy free soy sauce & add more salt to taste
- let simmer while prepare noodles according to package
- to serve: place some noodles in bowl with pho broth and veggies over top
